Kitchen Manager

Purpose:
Cantina Viajero, located in Trinity, FL, is seeking an experienced and passionate Kitchen Manager to join our team and help create exceptional Mexican dining experiences for our guests in an upscale casual setting. As a key player in our kitchen team, you will support the efficient operation of the kitchen while ensuring high-quality culinary standards. Working closely with the Executive Kitchen Manager, you’ll oversee various kitchen operations, including food preparation, inventory management, and staff training.
Responsibilities:
-Opening Duties-
Set up kitchen stations (grill, pantry, pastry, etc.) as assigned.
Create a Prep List and gather necessary food items from designated storage areas.
Ensure the quality and quantity of stock and supplies meet operational needs.
Confirm an adequate supply of chinaware for service.
Maintain cleanliness and hygiene of the kitchen according to high sanitation standards.
Oversee and support preparation of food items for the upcoming shift.
-Operational Duties-
Skillfully prepare and cook meals as needed according to the scheduled shift.
-Closing Duties-
Properly cover, label, and store food items.
Clean kitchen areas and wipe down surfaces.
Transport soiled wares to the dishwashing area for proper cleaning.
Position Requirements:
Must be at least 21 years of age.
Minimum of 1-2 years of experience as a kitchen supervisor or kitchen lead.
2 years of relevant computer experience.
High school diploma or equivalent required; formal culinary training preferred.
Possession of required food safety and sanitation certifications.
Ability to communicate in Spanish with the crew is preferred.
-Physical Requirements-
Ability to stand for long periods, lift up to 40 lbs (typically 10-20 lbs), and perform tasks requiring physical strength and stamina.
